SIR,—As the chairman of a firm of sherry shippers who

have been established in Jerez de la Frontera since 1852, I feel I must comment on the statements made by your correspondent, Leslie Adrian, in his article 'On the Warm.Side' published in your issue of August 2.

(1) A 'natural' Fino is never dressed up for the British market with the addition of alcohol and colour.

In any case this would make no difference to the price in this country as sherry can only be shipped from Spain at an alcoholic strength which brings it into the higher duty class in this country.

(2) Manzanilla is just as much a true sherry as Fino, Amontillado and Oloroso.

(3) Oloroso is always darker in colour than a Fino, and in this country at any rate is almost always sweeter.
